Grapes variety: Erbaluce grapes from the Caluso area. The altitude is between 300 and 350 meters above sea level, on a medium-textured soil.
Description: Erbaluce di Caluso Passito or simply Caluso Passito, is made from grapes of Erbaluce dried for five months. Here its high acidity is matched by luscious sweetness. Fermentation is made in stainless steel for three months and then in big oak barrels for at least 40 months. It is finally refined in bottle for one year. Oaked style is impressive and winemaking for this Passito wine is in itself very laborious.Our Erbaluce di Caluso is of an intense and brilliant amber yellow colour. The bouquet is rich, refreshing and full of spicy perfumes ofdried fruits with chestnut hints. The taste is full-flavoured with a surrounding sweetness, never heavy or banal. It is intense, aromatic with an almost succulent aftertaste and wonderful honeyed finish.

Best paired: Perfect match for desserts, patisserie, and with aged cheeses. Precious also by itself.
Serving temperature: Open just before serving at 16°C.
